Food Safety Today

Food safety is a scientific discipline describing the handling, preparation, and storage of food in ways that prevent food related illnesses. Food safety includes the routines that should be thoroughly followed to avoid health hazards that can be brought about by the mishandling or the wrong preparation of food. Food safety directly correlates and overlaps with food defense to prevent the harm of consumers. Food safeties include the origin of food including the labelling, hygiene, food additives and pesticides as well as the biotechnology for the management of imports and exports.

What Can We Do To Maintain Food Safety

Food safety can be ensured by food establishments involved in the processing of food by following the international food safety directives. One of these directives is having a HACCP program. Within the HACCP program are requirements to maintain proper laboratory food testing records, quality control systems, the adequate auditing and inspection of food processes as well as the monitoring and evaluation of site specific operating procedures (SSOP), good manufacturing practices (GMP) and the environmental management systems (EMS) procedures respectively.

Why Food Safety Is Important

The access to sufficient amounts of safe and nutritious food is vital to sustaining life and promoting good health. The consumption of unsafe food containing bacteria, viruses, parasites or pesticides are the cause of more than 200 different diseases ranging from diarrhea to cancers. An estimate of nearly 600 million people, almost 1 out of every 10 in the world, fall ill because of contaminated food and this accounts for nearly 420000 deaths a year. Children under the age of five carry a large amount of the foodborne disease burden accounting for almost 40% with about 125000 deaths per year.
